不一樣的白切雞:麻辣酸菜白切雞

材料

一隻雞 (大約1kg多)

一包客家酸菜 (500g)

薑,蔥,蒜頭

八角

乾辣椒


調味料


生抽,老抽各 ½ 茶匙

花椒油1 湯匙

3茶匙


 

準備功夫

1. 把雞洗乾淨之後塗上鹽,放一些蔥和薑在肚子裡,醃製兩小時。

酸菜

2. 用水泡上大約一個小時,去掉部分酸和鹹的味道。切成小段。

薑蓉醬料

3. 把蒜頭拍扁切碎,蔥切成小段,薑磨成蓉之後把所有材料放到碗裡加入一點點的鹽然後淋上滾油,拌勻備用。


煮法

1. 用鍋煮開水之後,放入雞蒸25分鐘,熟後拿出來冷卻暫件。

2. 鍋裡倒入多一點點的油,熱後淋上一部分油到薑蓉醬料的碗內。

3. 把蒜頭,八角,乾辣椒倒入鍋內炒香後,加入酸菜。

4. 加入調味料然後再加入半碗水燜十五分鐘左右。盛到碟子上。

5. 雞暫件後,放在麻辣酸菜上再淋上薑蓉醬料。

6. 完成!可以開餐啦!


 

Mala Pickled Mustard Green Chicken

Ingredients


1 whole chicken (approx. 1kg)

1 pack Pickled Mustard Green (500g)

Ginger, spring onions, garlic

Star anise

Dried chillies


Seasonings

½ tsp (each) light & dark soya sauce

1 tbsp pepper oil

3 tsp sugar


 

Pre-preparation

Chicken

1. Clean the chicken and marinate with salt for two hours. Stuff the chicken with spring onions and ginger.

Pickled Mustard Green

2. Soak the pickled green in water for about an hour to get rid of some of the sourness and saltiness. Remove from water and chop up the pickled green.

Ginger sauce

3. Chop up the garlic and spring onions into a bowl. Use a fine grater to grate the ginger into the same bowl and add some salt for seasoning.


Method

1. Steam the marinaded chicken for approximately 25 minutes after the water has boiled. Once cooked, set aside to cool before cutting.

2. Pour a bit more oil than usual into a pan and let it heat up before pouring the oil into the Ginger sauce bowl. Mix well.

3. Stir fry the garlic, star anise, and dried chillies in the pan until fragrant, then add in the pickled green and continue to stir fry.

4. Add the seasonings and mix well. Add about a half a cup of water to the pan, cover it with a lid, and let it cook for 15 minutes on low heat. Plate up.

5. Cut up the chicken and place on top of the pickled green. Spoon the ginger sauce over the chicken.

6. Serve!
